Satay
Pasar Malam Favourite
Satay is a Southeast Asian kebab made from seasoned, skewered meat grilled over charcoal until caramelised. It can be found throughout Malaysian hawker stalls in food courts and pasar malam.
The types of satays vary from satay daging (beef), satay kambing (mutton) and satay ayam (chicken). It’s often served with raw onion slices, cucumber and nasi himpit (pressed rice). It is also dipped into a sweet and spicy peanut sauce that elevates its flavour.
Nasi Himpit (Pressed Rice)
The name 'nasi himpit' derives from the method of preparation, where the rice is placed between the weights and compressed. Originally food for the traveller, this method of preparation extended the rice's shelf life and minimised storage space.
